			<content:encoded><![CDATA[<p>Phil Wood, founder of Ten Speed Press, passed away at his Nob Hill home in San Francisco on Saturday December 11<sup>th</sup> after a long battle with cancer.</p>
<p>Phil’s love affair with the book business began in the late sixties as a salesman for Penguin, criss-crossing the country in a station wagon laden with paperbacks. In 1971, from an apartment overlooking Telegraph Avenue and Sather Gate on the Cal Berkeley campus, he produced his first “trade” paperback, <em>Anybody’s Bike Book</em>, and named his fledging enterprise Ten Speed Press.</p>
<p>From this modest, unheralded launch, a legacy of landmarks in independent publishing followed, from the perennial bestseller <em>What Color Is Your Parachute,</em> going strong after nearly forty years, to Ten Speed’s formidable cookbook program, led by the convention-breaking classic <em>Moosewood Cookbook.</em></p>
<p>Phil’s friendships with restaurant chefs like Mark Miller, Charlie Trotter, and Roy Yamaguchi paved the way for the richly illustrated cookbooks Ten Speed has become justly known for, and today Ten Speed’s list is crowded with James Beard Award-winning titles, including <em>The Bread</em> <em>Baker’s Apprentice, Cooking, </em>and<em> Alinea.   </em></p>
<p>But no tribute to Phil Wood would be complete without mentioning at least a few of his special favorites, like<em> Mushrooms Demystified</em>;<em> How to Shit in the Woods</em>;<em> White Trash Cooking; Flattened Fauna; Why Cats Paint; and You Say I’m a Bitch Like It’s a Bad Thing. </em></p>
<p>A tour of his office would reveal stacks of manuscripts, <em>Wall Street Journals</em>, and fine art auction catalogs, a nineteenth-century Chinese desk with a drawer full of rubber cockroaches, walls crowded with James Beard Awards and a singing trout, and a fine taxidermy boar comfortably ensconced in a Ming period chair. </p>
<p>Phil consistently surrounded himself with people whose tastes and interests differed from his own, a key component to Ten Speed’s always fresh, eclectic style. Along the way he gambled on untried authors, editors, and designers, many of whom are still with Ten Speed to this day.  </p>
<p>In 2009, after Ten Speed Press was acquired by Random House, Inc. and became an imprint of the Crown Publishing Group, Phil Wood was named Publisher Emeritus.</p>
<p>Everyone in the extended Ten Speed family mourns the loss of Phil, to whom we and countless others in the publishing community, owe so much.</p>

<p><em>Ethan Stowell was named one of the 2008 Best New Chefs in America by Food &amp; Wine magazine and has been honored with multiple James Beard Award nominations for &#8220;Best Chef Northwest.&#8221; At 36, he is also a Seattle institution. He opened his first restaurant, Union, to critical praise in 2003. Since then, he&#8217;s opened Tavolata, an urban Italian eatery; How to Cook a Wolf, a smaller Italian-inspired restaurant that features small plates and house-made pastas; and Anchovies &amp; Olives, another Italian restaurant that is seafood- and pasta-focused and offers a wine list that is 100% Italian with an emphasis on white varietals. Last month, he opened his fourth restaurant, Staple &amp; Fancy Mercantile, where he is back to his first love, the kitchen. He went out on a limb with another Italian-inspired menu, so it&#8217;s no wonder that his first cookbook is called <strong><a href="http://www.randomhouse.com/catalog/display.pperl?isbn=9781580088183" target="_self">Ethan Stowell&#8217;s New Italian Kitchen</a></strong>.</em></p>
<p><strong><em>It&#8217;s obvious why you wrote an Italian cookbook, but what is so appealing to you about Italian cooking?</em></strong></p>
<p style="text-align: left;"><em>It&#8217;s the approach to the food. The first thing I learned to make was pasta. My cooking has always leaned in that direction. My background is in high-end restaurants, but I got kind of bored. The &#8220;New American&#8221; label isn&#8217;t fun, it&#8217;s more of an ode to the food rather than to the eater. I like being more casual. No rules. No eight-course meals. I like it to be more relaxed. That seems to be what Italian food is like&#8211;if you are going to cook, do it well, but not fancy. I saw a real lack in the Seattle market for serious Italian cooking, and this cookbook is the cumulation.</em></p>
<p style="text-align: left;"><em>For example, in the recipe for geoduck with scrambled eggs, I have respect for the geoduck. Don&#8217;t be afraid of this guy. With scrambled eggs, you get an easy way to try geoduck and a way to sample the full pleasure of the ingredients. That&#8217;s how I see Italian food&#8211;nice ingredients, not exceptionally hard to make, value the food, have a good time eating.</em></p>
